Delta freshwater prawns feature of new blog

Lauren Farms, Leland, Miss., has launched a blog (www.laurenfarms.blogspot.com) to keep in touch with its customers, according to Dolores Fratesi, co-owner of the farm with her husband Steve.
Fratesi also uses the blog as an outlet to update prawn farmers on trends and news throughout the industry, and prawn customers on the restaurants and grocery stores that carry her products.
“This is how we keep in touch with folks who are on the go and constantly moving. Lauren Farms always tries to be on top of that from a marketing standpoint,” she said. “My customers and fellow prawn farmers are important to my business, and I enjoy being able to stay in touch with them.”
She plans to update the site with videos of her cooking demonstrations from The Catfish Institute’s National Catfish Month media tour, during which she traveled to Southeastern television stations promoting U.S. Farm-Raised Catfish.
Fratesi cooks on Delta Kitchen, a weekly program on a local television station, and posts those recipes to her blog.
“Our blog has been a great success so far. It’s so nice to be able to share ideas, recipes and any news quickly and on a personal level with my customers. Plus, it’s so much fun!” she said.
The Web site also has information on Lauren Farms’ annual Pondbank Harvest, set this year for Sept. 20 and 27.
“We just started doing this a few years ago, and it’s become quite the Delta event. Bring the whole family (put the kids in their mud boots!) and your cooler and ice, and load up on fresh, straight-out-of-the-pond prawns for a great price.
“We only do this two weekends a year —10 a.m. to 4 p.m. Large prawns are $7 per pound, and jumbo prawns are $8 per pound.
“If you know that you want some prawns,” Fratesi said, “call me at ahead of time (662) 390-3528 and book your prawns. We always sell out, and usually have to turn folks away.”
